First of all, we have to defrost the pork loin from the freezer and dry it with the paper towel.

Then, we marinate our pork loin by gathering the black pepper, thyme, salt, olive oil and rub on the surface of the pork loin. After that, we put them in the Ziplock bag and set aside.

Thirdly, we have to pre-heat our sous vide machine to 61 degree C by preparing a water bath with our sous vide machine in it and put our bad boy loin into the water bath for 2 hours.

After the sous vide process, we pan sear our pork loin to caramelize the surface so we reach a golden brown color.

Firstly, we peel and trim the asparagus so they won’t taste too rough or else we’ll have a rough and tasteless asparagus.

Then, we cut the asparagus to our ideal length, about 5 cm. We blanch it in a pot of water mixing with a little bit of olive oil. This act will give the cooked asparagus a much fresher color.

Furthermore, we dry out the cooked asparagus with paper towel so the oil will not spout out when we’re cooking our asparagus pork roll.
