Actually, there are many recipe for making shortbread cookies.  For example, some recipe may add in more liquids such as eggs, milk or cream. The ingredients of combination is totally different.

We want to simplify the recipe so we make it simple and easy to make. We just need a few ingredients and equipment for baking this buttery shortbread cookies at home.

Ingredients:

Unsalted butter    120g (Cut into small chunks, room temperature)

Icing sugar            55g (optional)

Sea salt                  2g

Cake flour            60g (Sifted)

Bread flour          60g (Sifted)

Corn starch          55g (Sifted)

 

Instructions

Firstly, we gather all of the ingredients and set aside.

Then, we turn on the electric mixer with medium speed to beat the butter until it’s smooth and pale.

Moreover, we pour in icing sugar, keep mixing until blended and creamy.

After all, we add in all the dry ingredients to the butter mixture. We use our hands to mix it until we form a nice and smooth cookie dough.

*If it is too wet, try to dust a little bit cake flour into the dough. *

Furthermore, we use the rolling pin to squash the shortbread cookie dough to our ideal thickness. Then we cover the dough with parchment paper and put it in refrigerator until semi-hard.

Next, we use the “star” mold to cut the dough. We bake it in 180 degrees C (350 degrees F) for about 15 minutes until it’s golden brown.

Finally, we remove the buttery shortbread cookies from the oven. We transfer to a cooling rack then let them completely chill before serving.

We’re gonna introduce a pastry cream reccipe with you today, as we mentioned before, we wanted to make a custard tart rather than a
lemon tart. Pastry cream is tasty, although lemon curd is also tasty.

This time, we bought the vanilla pod from the market and we’re gonna make a very rich vanilla pastry cream that’s easy to make. We use fresh vanilla pod, the flavor is much better than the vanilla extract because the vanilla pod has seed inside, the flavor is much stronger than using the extracts.

First of all, this pastry cream recipe is pretty easy to make, it’s just like slicing a piece of cake with a sharp knife. If you see our recipe, you’ll find out that the ingredients are simple as 1,2,3. They are the milk, eggs, corn starch, flour, sugar and egg yolks. That’s all! How easy that is.

Although the recipe is simple, we have to focus on the preparation on our recipe, the yolk. When we’re separating the egg yolk from our egg white, we have to be really careful so the egg white will not contaminate our egg yolk.

Or else, we’re gonna ruin our yolk and made a very light and tasteless custard.

Moreover, the milk is also one of the key ingredients in making custard. We don’t use skim milk, we use full fat content milk.

If we use skim milk to make the custard, we’re gonna end up getting a very rough custard without any milk aroma.

what makes custard different is the aroma of egg yolks and the texture, smoothness of the milk.

Introduction

Actually, we didn’t mean to make a lemon tart before, we wish to make a fruit tart that use pastry cream and fruits to make. We just found out some of the ingredients are missing, it’s the vanilla.

While making pastry cream, vanilla is a key ingredient to excel the flavor and the aroma. If we don’t have the vanilla, we can’t make a stunning pastry cream. That’s the reason we changed our recipe to a lemon tart.

After you made the lemon tart, you might notice that it’s not too sweet or sour at all because we changed our recipe to a healthier version that is good to go after you had a brilliant dinner. We don’t want to have a massive sugary dessert after we had our dinner.

As you can see later in our recipe, you may notice that all of the ingredients are pretty fresh and refreshing. We use the lemon juice,lemon zest and fresh eggs to make our tart. It’s because ingredients affect the result of our products.

lemon zest 20g

caster sugar 60g

lemon juice 80g

unsalted butter 110g

eggs 150g

Firstly, we measure the lemon juice, lemon zest and 60g of sugar in a medium sized pot.

Then, we measure the eggs in a large bowl, we separate the eggs in another bowl because we have to boil the lemon juice mixture and pour into the eggs the make a custard. If we don’t separate them, we’ll burn the eggs.

Meanwhile, we measure the other part of the sugar with our eggs and all of the ingredients have to mix well.

After all, we pour our bowl lemon mixture into our eggs and keep whisking until all of the ingredients combined together.

Then, we return the mixture back to our pot and keep cooking them until it reaches 85 degree C, the custard should look like a smooth paste like the picture above.

Do you remember our butter, here is the last part of the cooking process. We mix the butter into the custard bit by bit so it’s easier to combine and won’t form lumps.
