What is gelatin?

This is a question that’s mostly asked by people when they first known of gelatin.

Gelatin is a protein that solidify our liquid, we use that in making jelly, mousse, confit or even western dish sauce. It is a substance that took a big part in pastry.

What is gelatin made of?

Gelatin is made of bones. Yes, it’s made of bones, the method in making gelatin is very simple, boil the pig bones, skin with water and reduce the whole pot of mixture, the residue fluid is the gelatin, sound easy but when you’re making that, you’ll figure out that you need lots of bones and skin to make only a small volume of gelatin, that’s why we’ll not make that by our own hands. We buy gelatin sheets and gelatin powder in stores.

Gelatin sheets or gelatin powder?

What’s the difference between gelatin sheets and gelatin powder? Most of the people will ask this question so what’s the difference? the ingredients are the same but the application method is totally difference. If you’re using gelatin sheets, you’ll have to just soak the gelatin sheets into the cold water and soak them until they become soft.

On the other hand, when we’re using gelatin powder, we measure the powder and mix that will cold water, mix well with a whisk and wait for the powder to absorb the moisture and become moist.

Both of the gelatin powder and gelatin sheets make good quality of jelly or mousse but i seldom use gelatin because of the following reasons.

Firstly, gelatin sheets need to soak in the water but the water volume do not have a standard in recipe, chefs will ask you to just soak them in water and use it, no measurement affect the quality of the products, for the gelatin powder, we measure exactly the correct ratio of water to blend with the gelatin powder,having a much more precise result.

Secondly, if you’re a careless person, i really don’t recommend you to use gelatin sheets because they are sensitive with heat, if you forgot to use cold water to soak the them, they will melt and all you have is a watery gelatin. On the other hand, if we accidentally use the warm water or room temperature water to mix the gelatin powder, we still measure the exact volume of water and gelatin although the mixture will become a little watery.

So, which one are you gonna choose, gelatin sheets or gelatin powder? We prefer gelatin powder.


As we mentioned before, we use cold water to soak our gelatin sheets and gelatin powder but why?

First of all, we figure out that there are freezing point and melting point in science, freezing point means that the temperature that’ll freeze the substance and the melting point of cos mean that the temperature to melt. The melting point of gelatin is about 35 degree c, we should also mention that it’s quite hot in Hong Kong, most of the time, the temperature of the room temperature water is around 30 degree C, the 30 degree C.

Although we mention that gelatin melt at about 35 degree C, if we soak it into water, the gelatin absorb the water and soften, we have to squeeze the excess water out of gelatin sheets. Here comes the important part, when we’re holding the gelatin, our hands have body temperature, that will melt the gelatin and your hands will be sticky.

As a result, we use cold water to prevent the melting of gelatin, as the cold water can help us to cool down the temperature of the gelatin so we will not get a mess.

Hey guys, we found some left-over chocolate cake and started to think, whether we could use those pieces to make some nice pastry.

We thought of making chocolate mousse cake at first but the flavor of chocolate might be too rich for me so we banned the idea, of cos, if you wish to know how to make the chocolate mousse cake, we could share that next time.

Then, what should we make then? How about some fruity one like the mango mousse cake. We opened the fridge and found some frozen strawberries, what came to our mind is a strawberry mousse cake, the fruity flavor with a chocolate cake, sound nice.

So, we started making the strawberry mousse cake at about 23:15, it’s late late night but we’re just pastry addicts, we gather all of the stuffs and start making the mousse cake.

We start at 23:15 and finished our mousse cake at about 23:50, it’s a night time dessert, the fruity flavor of the strawberry blended in with the bitter sweet taste of the chocolate cake,we couldn’t imagine we made some strawberry mousse cakes with just those simple ingredients.

Whipped cream 500g

Strawberry puree 250g

Gelatin powder 5g

Water 25g

Lime juice 3g

In order to make the strawberry mousse cake,we whip the cream to medium peak first, cream is much easier to whip than egg whites so we have to take care well,not to over beat the cream.

Next, we mix the gelatin powder with the the water and whisk it to blend the water and gelatin together, it’ll become a paste.

Then, we measure the puree in a small pot with the lime juice, the lime juice can make a great twist with the mousse, boil the puree mixture in low heat .

After that, we melt the gelatin mass into the puree mixture, the gelatin will melt instantly because of the heat in the pot, mix well and set aside. We’ll need that later.

Moreover, fold in the whipped cream with the strawberry puree mixture, remember to slowly fold in the cream, if we over folded that,the final mousse will become very watery and the mousse cake will be so dense to bite.

After all, pipe the mousse on a container, in our situation, We use a dome shape mold so we can make a dome shaped strawberry mousse cake.

Then, we just fill in our mousse and stick a sponge on top of the mousse and scrape away the excess mousse to make a pretty finish.

Everyone loves mousse cake, chocolate mousse , strawberry mousse or even white chocolate mousse but we’re gonna focus on Mango Mousse cake today, one of my favorite mousse cake.

We’re not gonna pass you a recipe because with ours’ tips and technique, you can make a tray of mango mousse with any recipe you found in books or website.

Rule no.1


In our recipe, we use cream cheese to make the mousse cake coz the crean cheese has a creamy texture that taste like cheese cake.

Then, we use warm cheese to make our mousse’s base as the softer the cream cheese, the creamier mousse you can have so we boil a big pot of water, off the heat and dump in our cream cheese (with plastic wrap) into the hot water for about 10 minutes.

After that, put the cream cheese in the mixer and add together with the sugar, whip them up with a paddle in medium speed so the cream cheese with not over whipped.

Most of the time, We use pasteurized egg yolk because it is safe to use as our recipe use raw yolk to make the mousse cake.

Unfortunately, not everyone can find the egg yolk that’s pasteurized. Here is one of the method to make a semi raw yolk that is safe to use.

Firstly, We boil a pot of water to a rolling boil that is extremely hot. We put a double boiler(put a bowl of egg yolk on top of the pot of water) to warm our egg yolk, meanwhile, we whisk our yolk for about 6 minutes so it won’t cook.

Then, you have your personalized pasteurized egg yolk that is ready to use in our next steps.

We pour our egg yolk into the cream cheese mixture in one time. We whip it at medium speed so it won’t break and be miserable for you to use. You should have a very creamy and homogeneous mixture.

Then, Brush your cakes with your syrup

Moreover, pour in the mousse on our plain sponge.

Finish that with a mango glaze and there you have a nice and tasty mango mousse cake!
