Introduction

Do you remember the cookie dough tart crust we learnt before? It’s a tasty crispy tart crust. We’re gonna share with you on how to make a brilliant lemon tart  with our tart crust.

Actually, we didn’t mean to make a lemon tart before, we wish to make a fruit tart that use pastry cream and fruits to make. We just found out some of the ingredients are missing, it’s the vanilla.

While making pastry cream, vanilla is a key ingredient to excel the flavor and the aroma. If we don’t have the vanilla, we can’t make a stunning pastry cream. That’s the reason we changed our recipe to a lemon tart.

After you made the lemon tart, you might notice that it’s not too sweet or sour at all because we changed our recipe to a healthier version that is good to go after you had a brilliant dinner. We don’t want to have a massive sugary dessert after we had our dinner.

As you can see later in our recipe, you may notice that all of the ingredients are pretty fresh and refreshing. We use the lemon juice,lemon zest and fresh eggs to make our tart. It’s because ingredients affect the result of our products.

If we want to have a stunning and delicious dessert, we have to use fresh ingredients to make. you won’t believe the result you’re gonna get.

lemon zest 20g

caster sugar 60g

lemon juice 80g

unsalted butter 110g

eggs 150g

caster sugar 60g

Firstly, we measure the lemon juice, lemon zest and 60g of sugar in a medium sized pot.

Then, we measure the eggs in a large bowl, we separate the eggs in another bowl because we have to boil the lemon juice mixture and pour into the eggs the make a custard. If we don’t separate them, we’ll burn the eggs.

Meanwhile, we measure the other part of the sugar with our eggs and all of the ingredients have to mix well.

After all, we pour our bowl lemon mixture into our eggs and keep whisking until all of the ingredients combined together.

Then, we return the mixture back to our pot and keep cooking them until it reaches 85 degree C, the custard should look like a smooth paste like the picture above.

Do you remember our butter, here is the last part of the cooking process. We mix the butter into the custard bit by bit so it’s easier to combine and won’t form lumps.

Smoked salmon spaghetti with 7 ingredients

Hi guys, today we’re going to share how to make Smoked salmon spaghetti at home.20180417_121321.jpg

This pasta is very simple but it’s really awesome! Basically you just need 7 ingredients to make it. Of course, the main ingredients are spaghetti and smoked salmon, we have added in lemon, chili, garlic, green onion and unsalted butter so this pasta can let you taste a little bit sour and spicy in your mouth. Magic!

Simple tomato spaghetti :
Spaghetti Aglio E Olio with 4 basic ingredients :

Here is the following recipe and instructions below:

Recipe:

Ingredients: (Yields: 2 servings)
150g Spaghetti
180g Smoked salmon
25g Green onion
40g Lemon juice
1 tbsp Lemon zest
4 cloves Garlic
1pc Chili
1 1/2tsp Olive oil
20g Unsalted butter
20g Grated cheese (optional)
Seasoning:
A pinch of Salt
A pinch of Black pepper
A pinch of Thyme/ Dill

OK let’s start cooking!

Instructions:

1. First of all, you need to boil some spaghetti at the beginning. We have taught 8 tips to cook pasta perfectly before, you can see 8 tips to cook pasta perfectly.

2. Next, wash and peel the lemon, we just need the zest with yellow color part, squeeze the juice out and keep it. If you peel too deep, the lemon zest will taste very bitter. After that peel and finely chopped the garlic and green onion. For the chili, just deseeded and finely chopped. Then, finely sliced the smoked salmon to ideal size.20180417_111006.jpg

3. Moreover, preheat your saucepan to medium heat, add in olive oil, garlic and chili, keep stirring for about 3 minutes. Be carefully do not let your garlic get burnt.20180417_111344.jpg

4. Furthermore, add spaghetti, green onion, lemon juice, lemon zest and smoked salmon. Stir well.20180417_111503.jpg

6. Afterwards, seasoning with salt, pepper and Thyme. Remember one point, we have reduced time of boiling pasta so we can cook longer time in this part. DO NOT overcooked. The best texture of pasta should be “AL Dente”, in English it translate as “to the tooth”, it means pasta is soft enough to eat but still have a bit of bite and firmness.20180417_111645.jpg

Seasoning

7. When the smoked salmon changed the color, add in unsalted butter, stir until combined. Lastly, adjust the taste again, then remove them from the saucepan and plating. Garnish it by herbs or you can grate some cheese on top. Enjoy!

Have you ever tried to make candied stuff, like candied apple, candied flower or other candied items? We love to make candied stuff cos it’s easy to make and delicious.

We went to buy some candied lemon in an old candy shop, we think that the candies are brilliant and we wish to make our own easy to make candied lemon.

Having some attempts to make the candy that suite for us, we want to have a candy that is not too sweet, not too burnt and the flavors of the fruit should remain, the sugary taste should not over the fruity flavors.

That’s not hard for us to figure out the formula to make a fruity candied lemon, we just keep using lemon,skin the lemon, boil the syrup, infuse the lemon and wait for it to infuse.

Finally, we found out the best recipe that suit our annoying tummy. We also tried to make candied apples with this recipe. If you would like to use other stuff like orange,pear or others, you can try to use our recipe to make.

Let’s get started,here is the recipe for making the fruity candied lemon.

Sugar 230g

Water 250g

First of all, skin the lemon on a chopping board and blanch them with hot boiling water,the reason we blanch it first is to release the flavor in the lemon zest or the lemon skin.

Then, the blanched lemon skin have to soak into a ice water bath so the lemon skin will be tender and soft.

After all, we measure the sugar and water in a small pot and bring to simmer. We put our Lemon peels into the pot and cook it with low heat so the syrup can infuse into the lemon.

Furthermore, We let the whole mixture to simmer for about 45 minutes at least, the longer you cook the lemon,the crispier it’ll be.

Be careful!! the syrup is extremely hot, don’t use your finger to test the temperature or even taste that with you tongue, I tried that before, big regret.

After simmering to the texture you like, take the lemon out of the syrup and transfer them on a baking tray with parchment paper , let cool and enjoy the candy.
