Introduction

Hello guys, we’re gonna share a very simple but tasty fish recipe with you today.

In this recipe, you’ll have a very juicy and crispy fish dish. It’s simple as slicing a piece of cake with a knife.

We’re gonna use Japanese pike in this recipe because the meat is much juicy and the oil content is much higher than other regular dishes.

In Hong Kong, there’re a lot of restaurants serve pikes but they’re not tasty and juicy. They sometimes cook the fish and put aside.

When there is order, they’ll just throw the fish in the microwave and reheat them. As a result, that end up evaporated the juices and harden the fish meat.

We hate having a dry and cold fish, that’s the reason we have to cook the fish by ourselves.

As you can see, we use simple ingredients in cooking because we love classic and natural flavors of the fish. We only use salt, pepper and some Japanese spices.

First of all, we defrost the pike and chop away the fish head.

Then, we cut through the side of the fish and take out all of the organs.

 

After that, we wash the fish and clear away the blood veins in the middle of the fish because that’s the most stinks in the fish.

Dry the fish with papper towel and start seasoning with salt, black pepper and shichimi.

After all, we pre heat the stove to medium heat and spray the avocado oil on the grill pan.

Slide the pike one by one on the grill pan and pan sear until the fish become golden brown in colour and having a crust.

We flip over the fish and cook until the other side are golden brown and having a crust like the first time you cooked it.

Remember not to keep flipping over the fish as you’re gonna break the fish and the whole fish will be ruined.

Lastly, we transfer the fish to a plate and serve with lemon juice.

Today, we’re going to share with you how to cook Duck Foie Gras with basic ingredients you can have at home.

There maybe a lot of people that teach online with recipe, it seems easy but there are a lot of techniques  we have to spare in mind. Foie gras are juicy and creamy inside but crispy on the crust outside.

As we can see in some fine dining restaurant, there is a sauce on the plate that is sweet and sour, that’s a sauce called sweet vinegar, that vinegar enhances the flavor itself.

When we have a dish that is quite heavy and oily, a sweet and sour sauce helps to balance the whole structure. For example, if we eat western pork chop, we’ll have an apple sauce.

The idea is the same as the  sweet and sour sauce. It balances the ingredients. We don’t have to season much with the meat because that will ruin the flavor of the basic and original flavor of the meat.

So, on top of sharing with you on how to pan sear the foie gras, we’re also sharing the sauce that taste great with the bad boy, the balsamic vinegar sauce. It’s easy to make and taste delicious.

First of all, here’s are the ingredients for the balsamic vinegar sauce.

Ingredients

Balsamic vinegar: 100 g

sugar: 40 g

   Here’s the recipe for you.

Firstly, we pour the balsamic vinegar and the sugar in the sauce pan and start cooking them with medium heat on the stove.

Let the whole mixture to reduce for awhile until the flavor of the vinegar is less pungent. Cool down and the texture will become sticky and shiny.

First of all,  it should not be too soft when you pan sear it because you might end up crushing the creamy texture if you soften it when you cook them.

For the temperature, it should be in medium high heat or else the it will be greasy.

After it starts to release oil, flip them over to pan sear the other side until golden brown in color.

After pan searing them, we have to dry the oil on the surface of the finished dish with paper towel so they won’t be too oily.

We have shared many dessert and savory recipes before, we’re food lover. Therefore, we tried to make different type of recipes such as bread.

Normally, many restaurant serve soft roll for the starter or appetizer but most of them taste really bad. We think the texture is too dense and dry inside.

Soft roll is a traditional bread and it’s easy to make. We just need bread flour, butter, salt, sugar, egg, yeast and warm water for the recipe.

Spongy soft roll recipe (yield: 9-10pcs of soft roll)

Ingredients:

Bread flour 250g (sifted)

Butter 25g (Melted)

Salt 5g

Sugar 10g

Egg 50g (1 large egg)

Yeast 7g

Water 100g

 

Egg 1/2 pc (For egg wash)

Instructions

Firstly, we gather all of the ingredients. We mix the bread flour and salt together. Then we dissolve the yeast and sugar  in warm water. Warm water and sugar can makes the yeast activate.

Moreover, we add yeast, egg and butter to the dry mixture. We knead it to form a dough.

If the dough is too dry, you can add a little bit water. If it is too wet, just sprinkle some bread flour and rub again.

Next, we knead it for about 15 minutes until the surface is smooth.

Furthermore, we rest the dough and cover with cling film, let it proof for about 30 minutes or until double in size.

Afterwards, we squeeze out all the air from the dough. We divide and shape it to our ideal size. Let it proof again until double in size.

Then, we use a brush to egg wash before baking.

Finally, we bake the spongy soft roll at 180˚C/ 350˚F for 15 minutes until golden brown.
