Have you ever tasted Toffee candy before? There’re 2 major kinds of texture, chewy and hard. Which one do you prefer?

We prefer things that’s mild, not too soft or not too hard. Do you know toffee is a product made from caramel? It’s a soft caramel. Everyone can make caramel at home, it’s easy.We would like to share an experience with you, an experience that I had when i was a little kid.

Story time

One day, I received a caramel candy from my granny, I didn’t ask and just eat it straight away, it’s so soft and sticky, i almost lost my tooth because the gooey caramel sticks to my tooth. That was miserable.

I remember I had to drink a lot of water to get rid of those sticky caramel, I even started to fear of having candies after that night. I’ll never forget that caramel almost killed me that day.

Even now, I scared of these caramel toffee candies. But, we have to conquer our own fears or we’ll be eaten by the fear itself.

Conquer My Fear

We started to check and find recipe that’s not gooey as a slime or hard as a rock. We should never create a nightmare to our audience.That’s why we started finding the recipes in youtube, pinterest and even google the concept of caramel.

In fact, recipe doesn’t affect much in making products, every recipe is similar, just sugar, butter and cream. The methods and consistency is far more important in making any pastry or candy related products.

For example, if we’re making puff, the majority of people know that we have to use butter, liquid and cake flour to form a dough. It’s not about the recipe, it’s all focused on the procedure.

If we provide a Michelin star recipe to all of you but we don’t list out the procedure, you might not know how to do the recipe. That’s why we have to focus on the methods rather than the recipe.

So cut the crap. Let’s get started!

Cream: 80g

sugar: 250g

butter: 80g

salt: 2g

First of all, we have to align the baking paper on the tray and set aside. That really helps in our Party Foods.

Then, we weight out the sugar in a saucepan.

On the other hand, we boil the cream first. The concept of boiling the cream is to prevent crystallization of the sugar as we’re gonna pour the hot cream into the boiling sugar.

If we pour the cold cream into the hot syrup, it will cool down the sugar and crystallized. Moreover, the liquid will splash and hurt anyone around you.

Meanwhile, we get our salt and butter ready in two separated bowls.

When everything’s ready, let’s make our caramel. Cook the sugar in medium heat if you’re using a stove. If not, use high heat with your electric one.

It’s because that has a big different in the temperature between the electric one and the flame one.

We have to melt all of the sugar and add the hot cream bit by bit. No need to rush, just little by little.

If you pour in too fast, you’ll form large lumps in the mixture. We also change to our whisk after we started pouring the cream, that also prevent forming lumps.

After that, we put our butter into the caramel to emulsify the fats and the sugar together.

Last but not least, we pour the hot mixture on the baking tray to cool down for at least 4 hours.

After 4 hours, we cut our toffee into small pieces to serve.

Introduction

Have you ever tried a special sponge cake? For example, lime sponge, orange sponge, olive oil sponge and basil sponge. These sponges are something that has a unique taste.

When we heard of sponge, we will think of a traditional sponge cake thatW use the ingredients of eggs, sugar, cake flour and fats. In this post, we will introduce and explain how to make a fluffy sponge cake that tastes nice and has a airy texture.

We remember that the first sponge cake we made very very dense and it was hard as rock and dry as tissue paper. We learnt from website, youtube or even from recipes in the library. Unfortunately, none of these solve the problem.

After a lot of researches, we met with chefs that bake sponge cake everyday and asked for the solution, he just said a few words,”the ingredients in making a sponge cake is simple but the method you use affect the result”. This sounds really interesting and we asked him how, chef said that it’s really important to make a fluffy base and a gentle fold of ingredients at the end.

After that interview, we went back to the the kitchen and tried to make our sponge cake. It’s a unique sponge cake that made with caramel, a sponge that’s bittersweet.

whole eggs 150g

vanilla pod 1 pcs

cake flour 67g

salt 3g

butter 12g

Firstly, sift the cake flour and salt, pr-heat the oven to 170 degree C.

Then, measure whole eggs, vanilla seed and caramel powder in a mixing bowl, whip them in medium speed until the color become pale.

After all, gently fold in the cake flour into the whole eggs mixture.

Moreover, melt the butter and pour a little bit of the cake batter into the butter so the whole mixture become homogeneous. Pour the cake batter with butter into the main cake batter in the mixing bowl.

Lastly, transfer the cake batter to the ring mold and use a spatula to scrape away the excess cake batter. Smooth out the cake batter. Dust a small amounts of caramel on top of the cake batter before baking to make a crispy caramelized surface.

Bake the cake for 9 minutes to prevent drying out the cake, you should have a very moist caramel sponge.

Introduction

We’re going to share with you how to make a caramel sponge cake in the future post and we’re going to share with yo how to make the main ingredients in making out caramel sponge, the caramel powder.

Do you know how caramel is made? Caramel is made by cooking the sugar to a specific temperature. There are different cooking stages, two of the common stages are 117 degree C softball stage and the 120 degree C hard crack stage.

In this recipe, we’re using color indication, don’t have to care of the stages, we just look at the color of our caramel, it’s very important that you must not touch the caramel directly with your hands coz the caramel is extremely hot. I burnt my fingers before.

Firstly, we’re gonna use the dry caramel method, in making sugar syrup, we will add water to make the syrup because we want the syrup to be a liquid so we can pour the syrup easily but in making caramel, we use the dry method.

We pour the sugar directly in a pot and cook it with medium heat so the sugar can melt slowly and evenly.

At this moment, the sugar will become rough and sandy, it’s because some of the sugar is melted and caramelize but some are not, some chefs said that you should not mix the sugar when you’re making caramel. The reason behind this reminder is because you might burn the sugar if you’re not mixing evenly.

Then, mix the syrup until you reach the golden brown color so we can have a bitter sweet flavors’ caramel, if you don’t want to have a bitter taste, you can turn off the stove when the syrup become yellow in color.

After we make a caramel, we pour the caramel on a silicone mat to cool down the caramel to room temperature.

Cover the caramel with another silicon mat so the caramel brittle will not splash to everywhere when we break it.

The caramel should be broken into small pieces and easy to break.

Pour the caramel brittle in the food processor and pulse them for 3-4 seconds intervals and keep blending them for 10 seconds.

The finished product will be a powder that look brown in color, when we’re pouring water into the powder, it’ll be dark brown in color.
