Sous Vide Baby Lamb Rack
Long time no see, We had been really busy last few months and we’re back and we’re going to give you our secret Baby Lamb Rack recipe today.
Today, we’re gonna share with you on cooking the lamb rack with sous vide method. Believe it or not, the tenderness of the lamb rack is brilliant.
Let’s get started.
Baby Lamb Racks
Garlic 4 cloves
Sea salt: a pinch of
Black pepper: a pinch of
Rosemary: a pinch of
Dill : a pinch of
Firstly, we season the baby lamb rack with our sea salt, black pepper, garlic, rosemary, dill and olive oil, we put them together in a vacuum bag that’s good for sous vide. We marinate them for 1 day before we cook it.
On the other day, we prepare a pot of water and set the temperature to 53.5 degree C
Then we put the marinated baby lamb rack into the pot and let them cook for 2.5 hours.
After slow cooking the baby lamb rack, we take out them and pan-seared the lamb rack with high stove heat to finish it.
Lastly, we rest the baby lamb rack for 5 minutes before we slice them so the juice will not loose in flavor.
our baby lamb rack is cooked in medium- rare, if you would like to have a well done one, you could change the temperature of the pot of water to 67 degree C for 3 hours.
