We’re gonna introduce a pastry cream reccipe with you today, as we mentioned before, we wanted to make a custard tart rather than a
lemon tart. Pastry cream is tasty, although lemon curd is also tasty.
This time, we bought the vanilla pod from the market and we’re gonna make a very rich vanilla pastry cream that’s easy to make. We use fresh vanilla pod, the flavor is much better than the vanilla extract because the vanilla pod has seed inside, the flavor is much stronger than using the extracts.
First of all, this pastry cream recipe is pretty easy to make, it’s just like slicing a piece of cake with a sharp knife. If you see our recipe, you’ll find out that the ingredients are simple as 1,2,3. They are the milk, eggs, corn starch, flour, sugar and egg yolks. That’s all! How easy that is.
Although the recipe is simple, we have to focus on the preparation on our recipe, the yolk. When we’re separating the egg yolk from our egg white, we have to be really careful so the egg white will not contaminate our egg yolk.
Or else, we’re gonna ruin our yolk and made a very light and tasteless custard.
Moreover, the milk is also one of the key ingredients in making custard. We don’t use skim milk, we use full fat content milk.
If we use skim milk to make the custard, we’re gonna end up getting a very rough custard without any milk aroma.
what makes custard different is the aroma of egg yolks and the texture, smoothness of the milk.

Pastry cream Recipe
full fat content milk 280g
butter 80g
vanilla 1pcs
caster sugar 40g
egg yolk 50g
caster sugar 14g
corn starch 10g
cake flour 10g
Firstly, we measure the yolk, cake flour and corn starch in a medium sized bowl and mix well
Then, we measure the vanilla pod and the milk in a small pot and bring to a boil.
Meanwhile, we measure out butter on a container and set aside.
After the milk mixture bring to a boil, pour all of the liquid into the yolk mixture, mix well and boil it until it’s thickened.
Then, we blend in our butter into the custard, mix well and the pastry cream will be ready!
