Do you remember the cookie dough tart crust we learnt before? It’s a tasty crispy tart crust. We’re gonna share with you on how to make a brilliant lemon tart with our tart crust.
Actually, we didn’t mean to make a lemon tart before, we wish to make a fruit tart that use pastry cream and fruits to make. We just found out some of the ingredients are missing, it’s the vanilla.
While making pastry cream, vanilla is a key ingredient to excel the flavor and the aroma. If we don’t have the vanilla, we can’t make a stunning pastry cream. That’s the reason we changed our recipe to a lemon tart.
After you made the lemon tart, you might notice that it’s not too sweet or sour at all because we changed our recipe to a healthier version that is good to go after you had a brilliant dinner. We don’t want to have a massive sugary dessert after we had our dinner.
As you can see later in our recipe, you may notice that all of the ingredients are pretty fresh and refreshing. We use the lemon juice,lemon zest and fresh eggs to make our tart. It’s because ingredients affect the result of our products.
If we want to have a stunning and delicious dessert, we have to use fresh ingredients to make. you won’t believe the result you’re gonna get.

Lemon Tart Recipe
lemon zest 20g
caster sugar 60g
lemon juice 80g
unsalted butter 110g
caster sugar 60g
Firstly, we measure the lemon juice, lemon zest and 60g of sugar in a medium sized pot.
Then, we measure the eggs in a large bowl, we separate the eggs in another bowl because we have to boil the lemon juice mixture and pour into the eggs the make a custard. If we don’t separate them, we’ll burn the eggs.
Meanwhile, we measure the other part of the sugar with our eggs and all of the ingredients have to mix well.
After all, we pour our bowl lemon mixture into our eggs and keep whisking until all of the ingredients combined together.
Then, we return the mixture back to our pot and keep cooking them until it reaches 85 degree C, the custard should look like a smooth paste like the picture above.
Do you remember our butter, here is the last part of the cooking process. We mix the butter into the custard bit by bit so it’s easier to combine and won’t form lumps.
