Have you ever tried Palmier before, palmier is a french pastry that use the puff pastry to make. The shape of palmier is like an elephant ear and there is a lot of sugar coated on top.
In fact, the texture of the palmier is crispy because of the layers of butter and dough. If we use different flour to make the puff pastry, the texture will be different. For example, cake flour has less gluten in the flour and it doesn’t need to knead much to form a dough.
On the other hand, bread flour has more gluten so we need to knead the flour for a longer time to form a dough.
So, are we using the cake flour to make the puff pastry? Maybe, it depends on the recipe you use. I am using a flour called T55 french flour to make puff pastry because the flavor is much stronger than others’ flour.

Then, we have to leave the dough in the fridge for half an hour to harden the dough. Meanwhile, we shape the dough into a rectangle block.
