Milo Ice cream
Hot Hot Hot! It’s time to share a brain freezing recipe with you, It’s the Milo Gelato Recipe.
It could be tricky when we make ice cream because there are a lot of recipe that teach you how to make ice cream with 3 ingredients.
Those are cream, sugar and milk. This kind of recipe is very common around the net, they’ll teach you to whip up the cream with sugar and mix everything together.
This will end up having not much flavor in it. For example, if you want to make the recipe like we’re sharing with you today, you might end up having no intense flavor.
It’s because you didn’t infuse the milo flavor by heating up the powder. If you whip the cream with milo powder, you might end up having a coarse texture too.
We’re gonna share a traditional ice cream recipe with you, it involves egg yolks, sugar, cream and some milo powder.
It’s because we’re making the ice cream at home without an ice cream maker, we have to use invert sugar to prevent crystallization.
The final result will be a soft and creamy texture with an intense milo flavor.
Let’s get started.
Milo Gelato Recipe
egg yolk: 80g
sugar: 68g
milk: 150g
cream: 300g
corn syrup: 27g
milo powder: 20g
First of all, we measure yolks and sugar together and set aside.
For the milk, cream and corn syrup, we boil them together. After it boils, mix the milo powder and boil again.
Then, we pour the hot mixture into the egg yolks and mix quickly with a whisk. After mixing, we pour them back into our pot and cook until the mixture reaches 85 degree C.
Then, we strain the mixture and freeze it overnight.
As we said before, we do not have an ice cream maker, we have to make sure our ice cream is smooth .
We use the hand blender to blend the ice cream after it freezed and put it in the freezer for 2 hours and there you have it!
