Butter Cake (Madeleine)

Welcome back, we’re Newcookking. We’ll share a Butter Cake recipe with you, Madeleine.

Butter Cake recipe
Butter: 110g
Dark brown: 10g
sugar: 10g
honey: 15g
Sugar: 100g
salt: 1g
All purpose flour: 100g
Soda water: 4g
eggs: 150g
Lemon zest: 1 pc
Orange zest: 1pc
In fact, we will not use baking powder in this recipe because my girlfriend said that it’s not healthy to consume chemicals.
The procedure will be different compared with the baking powder version. We have to make sure the batter is thick enough to trap the gas from the soda water. Let’s get started!
First of all, we melt the butter, honey and brown sugar in the bowl.
Secondly, we mix the flour, sugar, lemon zest and orange zest together in a mixing bowl.
Then, we mix the eggs into the flour mixture until they have the same consistency.
After that, pour in the warm butter mixture into the batter and mix slowly until the batter is smooth.
Last but not least, add the soda water into the butter cake batter and mix well.
In order to make the butter cake, we have to rest the batter in the fridge for at least 1 day.
On the other day, take out the batter from the fridge and rest in room temperature.
Meanwhile, brush the butter cake mould and preheat the oven to 170 degree c.
Then, pipe 3 quarter of the batter on the mould and bake for 13 minutes.
